The large, open grill is fueled exclusively with wood from the family's olive grove, the same wood that produces the oil served at the table. This gesture speaks to a short, authentic supply chain and a way of understanding cuisine rooted in the land and its natural rhythms.
Selected meats, essential cooking methods
The meat selection is the result of constant research among responsibly managed farms and producers committed to animal welfare. Italian and international cuts are chosen for their quality, structure, and ability to perform at their best on the grill.
Marchigiana, Chianina, and Fiorentina breeds coexist with breeds such as Black Angus, Simmental, Galician, Asturiana, and other prized selections, each with specific characteristics, distinct flavors, and easily recognizable personalities.
