WINES

The history of Poggio Le Volpi is rooted in a century of hard work and passion for the land. A journey that began with Manlio Mergè, passed through Armando, and ended with Felice, establishing the Poggio Le Volpi Winery in 1996. A family history that has always had a clear goal: to enhance the Castelli Romani region through wine.
The vineyards extend across thirty-five hectares of volcanic soil, a terrain naturally suited to viticulture, capable of imparting structure, minerality, and identity to the wines produced. A philosophy that remains intact over time and guides every decision, from work in the vineyard to bottling.

From the vineyard to the table

The restaurant's wines, produced on site, form the heart of the wine selection. Labels grown in the Poggio Le Volpi vineyards complement the cuisine naturally, creating a direct connection between the region, the dish, and the glass.

The menu features wines such as Asonia Frascati Brut Metodo Classico, Epos Frascati Superiore DOCG Riserva, Donnaluce IGT Lazio, Cannellino di Frascati DOCG, and the flagship red Baccarossa Lazio IGP, along with all the expressions of the DOC Roma. Local wines are offered at the restaurant at wine shop prices, a natural extension of the work done in the cellar.

Masca del Tacco and big labels

Alongside Lazio wines, the menu also features labels from Masca del Tacco, a Puglian winery acquired by the Mergè family in 2010, now a benchmark for some of Southern Italy's most recognizable wines.

The selection is further expanded with a deep and comprehensive wine list, featuring hundreds of Italian and international labels. France plays a prominent role, with prestigious wines from Champagne, Bordeaux, and Burgundy, alongside a carefully selected selection of wines from other major wine-growing regions.

The wine list is designed to complement the cuisine without overpowering it, offering pairing options suitable for every moment of the meal. From everyday wines to more structured offerings, each selection is guided by a balance between quality, terroir, and the joy of sharing.
